The formulas for calculating the storage needs for the different types of objects within Veeam Backup for Office 365 is really worth reading. It may definitely help you with your sizing needs.
I especially want to point out, the section in this document regarding the protection of the Veeam Backup for Office 365 server. This is something which i experienced to be mostly forgotten when sizing such an infrastructure. Connecting an existing Veeam Backup & Replication infrastructure to a newly installed Veeam Backup for Microsoft Office 365 instance is a must. Whilst protecting the Veeam Backup for Office 365 servers with Veeam Backup & Replication, you will be able to fully implement 3-2-1 rule for protecting your Office 365 data.
Veeam therefore implemented a Microsoft VSS Writer for the Veeam Backup for Office 365 servers. In this way an application-consistent backup of those components is fully possible even while backup and restore jobs are running.
